PATHS Culinary Students Participate in Local Foods Cooking Challenge

Two students in the Culinary Arts program at Portland Arts & Technology High School (PATHS), participated in the Maine Innovative Local Foods Cooking Challenge at the University of Maine in Orono on April 25. Students Riley Beaupre and Frankie Coyne prepared a dish of salmon with crispy skin, black barley risotto, pan-roasted carrots, parsnip beurre blanc and blueberry gastrique, according to PATHS Culinary Arts Instructor Kimberly Mayone. Students from 10 Career Technical Education culinary arts programs participated this year in the University of Maine annual competition, which helps students learn about nutrition and Maine’s food system.
